Buy Goji Seeds

Question: Why do my seedlings die?
I've bought seeds on several occasions, and planted them in good soil (brand new potting soil) in well-drained pots on sunny window sills (8 hours a day, on average, south-facing). They've included Jerusalem Cherry, Goji (which I admit, has zero tolerance for anything but brightness), oregano, basil, rosemary, and mint.
And after they've germed, they get to about an inch or so high... and then they die.
I've tried carefully replanting them so as to unbind their roots, I typically water once every 4 days to 2 weeks (depending on how moist the soil is, and I test first), and I thin them down so a pot holds only two or three plants (the plan being to have each plant inhabit its own pot, when it's sizable).
I just don't get what I'm doing wrong. Usually, when I buy a plant that's established enough to call a seedling, it's far more likely to reach a ripe old age. Although I have condemned a few of them...
Thanks in advance.
